Roast dinner extra
Proper Yorkshire Puddings for 10
a classic roast dinner side
Golden, puffed-up Yorkshire puddings with crisp edges and soft centres - just right for serving with a big family roast.
Method
Whisk the flour, eggs, milk and salt together until you have a smooth batter. You can use it straight away, but it is even better if rested for 30 minutes.
Heat the oven to 220C/200C fan. Put a little oil or dripping into the holes of two 12-hole muffin tins, then place the tins in the oven until the fat is smoking hot.
Give the batter a quick whisk. Carefully remove the hot tins and fill each hole about halfway with batter.
Return the tins to the oven immediately and bake for 20-25 minutes until the Yorkshire puddings are well risen, deep golden and crisp.
Serve straight away with roast meat and plenty of gravy.
