Ingredients

• 8 good-quality sausages
• 800g potatoes, cut into chunks
• 3 carrots, cut into batons
• 2 peppers, cut into chunks
• 2 red onions, cut into wedges
• 3 tbsp olive oil
• 1 tsp dried mixed herbs or a few rosemary sprigs
• Salt and black pepper

Method

1. Heat the oven to 200C/180C fan.
2. Put the potatoes and carrots into a large roasting tin. Toss with 2 tbsp olive oil, the herbs, salt and pepper, then roast for 20 minutes.
3. Add the sausages, peppers and red onions. Drizzle with the remaining oil and turn everything so it is coated.
4. Return the tin to the oven for 25 minutes, turning once, until the sausages are cooked through and the vegetables are browned and tender.
5. Serve straight from the tray, spooning over any roasting juices.
